Need a recipe for Thanksgiving morning?
Serves 9 (to serve a crowd, simply double the recipe!)
1/2 cup butter, melted
1 cup brown sugar
2 eggs, beaten
1 cup pumpkin puree (NOT pumpkin pie filling)
1 cup milk
1 tsp. salt
3-1/2 cups quick oats
2 tsp. ground cinnamon
1 tsp. pumpkin pie spice
2 tsp. baking powder
Mix all ingredients in a large bowl, adding baking powder last. Put in a greased 9x9 pan. Bake at 350 degrees for 1 hour. Serve with yogurt and your favorite seasonal toppings. (We used blueberries, candied pecans, and chocolate chips!)
